Grown exclusively in a small, historic cluster of towns near Bari—centered around Bitetto—these indigenous olives are a true regional delicacy. Often called "apple olives" (olive mela) due to their unusually large size, perfectly rounded shape, and crisp, firm flesh, they are a standout on any Mediterranean table.
Harvested by hand between October and November, I Contadini preserves these olives using an ancient, natural brine method. We use only water and sea salt, allowing the olives to undergo a slow fermentation that removes their natural bitterness while preserving their vibrant green-purple hue. The result is a meaty, velvety olive with a unique flavor profile: a delicate balance of sweetness and a pleasant, herbaceous tang that is unmistakably Puglian.
